Healthy Garlic Parmesan Chicken Pasta

A nutritious and delicious healthy garlic Parmesan chicken pasta, perfect for busy weeknights.

Ingredients

  • 8 oz whole wheat penne or fettuccine
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 lb boneless skinless chicken breasts, cubed
  • 1/2 tsp paprika
  • 1/2 tsp Italian seasoning
  • 1 tbsp whole wheat flour
  • 1 cup low-sodium chicken broth
  • 1/2 cup low-fat milk (1% or 2%)
  • 1/2 cup plain non-fat Greek yogurt
  • 1/2 cup freshly grated Parmesan cheese
  • 2 cups baby spinach (optional)
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Bring a large pot of salted water to a boil. Add the whole wheat penne or fettuccine and cook until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Add the cubed chicken, and sprinkle with paprika and Italian seasoning. Cook until golden brown, about 5-7 minutes.
  3. Sprinkle the whole wheat flour over the chicken and stir to coat. Gradually pour in the chicken broth and low-fat milk, stirring constantly. Cook for another 3-4 minutes until the sauce thickens slightly.
  4. Remove from heat and stir in the Greek yogurt and Parmesan cheese until well-combined.
  5. Gently fold in the cooked pasta and stir in the baby spinach. Season with salt and pepper, mixing well.
  6. Garnish with freshly chopped parsley and serve hot.

Notes

Leftovers can be stored in an airtight container in the fridge for up to three days. Reheat in the microwave or in a skillet over low heat.
