  • ½ tsp salt
  • ½ tsp freshly ground pepper
  • 3 garlic cloves (minced)
  • 1 tsp oregano
  • 1 shallot (diced)
  • ½ tsp red pepper flakes
  • 1 cup chicken broth
  • 1 tbsp vegan butter
  • ½ cup coconut milk
  • ¾ cup sun-dried tomatoes (chopped)
  • 3 tbsp nutritional yeast
  • Basil leaves (for garnish)

Instructions

  1. Prep the chicken: If your chicken breasts are thick, slice them horizontally for faster cooking. Pat them dry, then generously season with salt and pepper.
  2. Sear the chicken: Heat olive oil in a large skillet over medium-high heat. Once hot, add the seasoned chicken breasts. Sear for about 5-6 minutes on each side until they’re golden-brown and completely cooked through. Transfer the chicken to a plate and set aside.
  3. Make the sauce: In the same skillet, melt the vegan butter. Add minced garlic, diced shallots, red pepper flakes, and oregano. Sauté for about a minute until fragrant.
  4. Combine: Pour in the chicken broth, then stir in coconut milk, chopped sun-dried tomatoes, and nutritional yeast. Let it simmer for 2-3 minutes to blend the flavors.
  5. Thicken the sauce: To achieve the perfect sauce consistency, mix equal parts cornstarch and water to create a slurry. Stir this into the sauce and let it simmer until it thickens to your liking.
  6. Serve: Plate the chicken, spoon the fragrant sauce over it, and garnish with fresh basil leaves. Enjoy this savory creation over noodles, spaghetti squash, or rice for a wholesome meal.
