Delicious and nutritious muffins packed with blueberries, perfect for breakfast or a snack.

Ingredients

  • 1 cup rolled oats
  • 1 cup cottage cheese
  • 2 eggs
  • 1/2 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup fresh or frozen blueberries

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with liners.
  2. In a blender, combine rolled oats, cottage cheese, eggs, honey or maple syrup, and vanilla extract. Blend until smooth.
  3. In a large bowl, whisk together baking powder, baking soda, and salt.
  4. Pour the blended mixture into the bowl with the dry ingredients. Stir gently until just combined.
  5. Fold in the blueberries, being careful to keep them whole.
  6. Scoop the batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  8. Let the muffins cool for a few minutes before transferring them to a wire rack.

Notes

Consider adding almond or peanut butter on top or serving with Greek yogurt for a balanced breakfast. Store in an airtight container for up to three days or freeze for longer storage.
