A quick and delicious hibachi chicken dish that brings the flavors of Japan to your home, combined with rice and mixed vegetables.

Ingredients

  • 1 lb boneless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 2 cups cooked hibachi rice
  • 1 cup mixed vegetables (like zucchini, bell peppers, and carrots)
  • Yum-Yum sauce for serving
  • Salt and pepper to taste

Instructions

  1. Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat.
  2. Add the diced chicken; season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes.
  3. Remove the cooked chicken from the skillet and set aside.
  4. Pour in the remaining tablespoon of oil and add the mixed vegetables. Stir-fry until tender-crisp, about 3-4 minutes.
  5. Return the cooked chicken to the skillet, mixing it with the veggies.
  6. Drizzle the soy sauce over the mixture and continue cooking for an additional minute, allowing the flavors to meld.
  7. Serve your hibachi chicken over the cooked hibachi rice and finish with a generous drizzle of yum-yum sauce.

Notes

For extra flavor, marinate the chicken in soy sauce for 30 minutes before cooking.
