  • 4 large eggs
  • 1/2 cup milk
  • 1/4 cup sweetener
  • 1 tsp vanilla extract
  • 1 cup blueberries

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the cottage cheese, eggs, milk, sweetener, and vanilla extract in a large mixing bowl. Whisk until smooth.
  3. Fold in the fresh blueberries, being careful not to break them.
  4. Pour the mixture into a greased baking dish, spreading it evenly.
  5. Bake for 30-40 minutes, or until the center is set and a toothpick inserted comes out clean.
