Delicious and nutritious muffins packed with protein and bursting with juicy blueberries, perfect for breakfast or a snack.

Ingredients

  • 1 cup almond flour
  • 1 cup oats
  • 1/2 cup protein powder (vanilla or unflavored)
  • 1/2 cup Greek yogurt
  • 1/2 cup unsweetened applesauce
  • 2 eggs
  • 1 cup blueberries (fresh or frozen)
  • 1/4 cup honey or maple syrup
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a large mixing bowl, combine almond flour, oats, protein powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk together Greek yogurt, applesauce, eggs, and honey (or maple syrup) until the mixture is smooth.
  4. Pour the wet ingredients into the dry mixture and stir gently until just combined. Avoid overmixing.
  5. Carefully fold in the blueberries.
  6. Evenly distribute the batter among the muffin cups.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack.

To store, keep in an airtight container at room temperature for up to three days or freeze for up to three months.
