A versatile and hearty breakfast burrito filled with breakfast sausage, scrambled eggs, and black beans, perfect for energizing your busy mornings.

Ingredients

  • 1 pound breakfast sausage
  • 6 large eggs
  • 1 can black beans, drained and rinsed
  • 1 cup cheese, shredded
  • 4 flour tortillas
  • Salt, to taste
  • Pepper, to taste
  • 1 tablespoon olive oil

Instructions

  1. Heat a skillet over medium heat and add the breakfast sausage. Cook until browned.
  2. In a separate bowl, whisk together the eggs with a pinch of salt and pepper. Pour the egg mixture into the skillet and scramble until fluffy.
  3. Add the black beans to the skillet, mixing well and cooking until heated through.
  4. Lay out a flour tortilla and scoop a generous portion of the egg and sausage mixture into the center. Sprinkle cheese on top.
  5. Roll the tortilla tightly, folding in the sides to secure the filling.
  6. Add a dash of olive oil to the skillet and toast the burrito until golden brown on both sides.
  7. Serve warm, or store for later enjoyment.
