A filling and delicious breakfast burrito packed with protein, perfect for busy mornings or leisurely brunches.

Ingredients

  • 1 breakfast sausage
  • 4 large eggs
  • 1 cup black beans, drained and rinsed
  • 1 cup shredded cheese
  • 4 large tortillas
  • Salt and pepper to taste
  • Cooking oil or spray

Instructions

  1. Heat your skillet over medium heat and add cooking oil.
  2. Cook the breakfast sausage until browned, then set it aside.
  3. Crack the eggs into the skillet. Scramble them until fully cooked, seasoning with salt and pepper.
  4. Add the drained and rinsed black beans along with the cooked sausage back into the skillet with the scrambled eggs. Mix well.
  5. Heat the tortillas in a pan or microwave until pliable.
  6. Spoon a generous portion of the egg mixture onto each tortilla and sprinkle with shredded cheese.
  7. Carefully roll each tortilla tightly to keep all the delicious filling inside.
  8. For meal prep, wrap each burrito separately in foil or plastic wrap and store them in a freezer bag.
  9. When ready to eat, microwave the burrito for a few minutes until heated through.
