  • 1 lb lean sausage
  • 6 eggs
  • 2 cups diced potatoes
  • 1 cup cheddar cheese, shredded
  • 4 tortillas
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 tbsp oil

Instructions

  1. Cook the sausage: Heat a drizzle of oil in a skillet over medium-high heat. Add the lean sausage and cook until it’s browned and fully cooked.
  2. Scramble the eggs: Crack the eggs into a bowl, whisk them together with salt and pepper. Pour the mixture into the skillet with the sausage, cooking until the eggs are fluffy.
  3. Prepare the potatoes: In a separate pan, heat more oil and toss in the diced potatoes. Cook them until they are crispy and golden, about 10-15 minutes.
  4. Warm the tortillas: Quickly warm the tortillas in a dry skillet or microwave for about 10-15 seconds to make them pliable.
  5. Assemble the burritos: On each tortilla, layer some of the cooked sausage, fluffy scrambled eggs, crispy potatoes, and a sprinkle of cheddar cheese.
  6. Roll and toast: Tightly roll each tortilla into a burrito shape and place them back in the skillet. Toast on each side for 2-3 minutes until golden brown.
  7. Serve or store: Let the burritos cool slightly before serving, or store them in airtight containers for meal prep.
