  • 1 cup all-purpose flour
  • 1/2 cup sugar (or sweetener of choice)
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup fresh or frozen blueberries
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C). Prepare a muffin tin by lining it with paper liners or lightly greasing it.
  2. Combine cottage cheese, eggs, milk, and vanilla extract in a large bowl. Mix until smooth and well blended.
  3. Whisk together all-purpose flour, sugar, baking powder, baking soda, and salt in a separate bowl.
  4. Fold the dry ingredients into the wet mixture, avoiding overmixing. Combine until just incorporated.
  5. Gently fold in the blueberries to ensure they’re evenly distributed throughout the batter.
  6. Spoon the batter evenly into the prepared muffin cups.
  7. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.
