  • 12 large eggs
  • 16 ounces full-fat cottage cheese
  • 1 large red bell pepper – diced
  • 1/2 cup diced yellow onion
  • 4 cups chopped spinach
  • 1/4 cup shredded gruyere or gouda cheese
  • 1/2 cup shredded cheddar cheese
  • 1/2 teaspoon garlic
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper

Instructions

  1. Preheat your oven to 375°F.
  2. Spray a 9×13 baking pan with cooking spray to prevent sticking.
  3. Evenly layer the chopped bell pepper, onion, and spinach at the bottom of the baking dish.
  4. In a mixing bowl, crack the 12 large eggs and whisk until well blended.
  5. Add the cottage cheese, garlic, Italian seasoning, kosher salt, black pepper, and 1/4 cup of the shredded gouda cheese to the bowl. Mix well.
  6. Pour the egg and cottage cheese mixture over the layered vegetables, spreading it evenly across the dish.
  7. Top with the remaining 1/4 cup shredded cheddar cheese.
  8. Bake in the preheated oven for about 50-55 minutes or until the center is set.
  9. Let it cool for 15 minutes before slicing and serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat portions in the microwave for 1-2 minutes. Can freeze for up to 3 months.
