  • 1/2 cup milk
  • 1/2 cup shredded cheese (cheddar or your choice)
  • 1/2 cup diced vegetables (like bell peppers or spinach)
  • 1/2 cup cooked turkey bacon, chopped (optional)
  • 1 tablespoon chopped fresh chives (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a silicone muffin tray for easy removal.
  2. In a large bowl, whisk the eggs and milk together until smooth.
  3. Stir in the shredded cheese, diced vegetables, chopped turkey bacon, chives, salt, and pepper until combined.
  4. Pour the egg mixture evenly into the muffin tray cavities, filling them about three-quarters full.
  5. Bake in the preheated oven for 18-20 minutes, or until the egg bites are set and lightly golden.
  6. Let them cool slightly before removing from the tray. Serve warm or store in the refrigerator for meal prep.
