Delicious and nutritious egg muffins packed with protein, perfect for quick breakfast meal prep.

Ingredients

  • 6 large eggs
  • 1/4 cup skim milk
  • 1/2 cup diced bell peppers
  • 1/2 cup chopped spinach
  • 1/4 cup diced onions
  • 1/4 cup shredded low-fat cheese
  • 1/2 cup cooked lean turkey sausage, crumbled
  • Salt and black pepper to taste
  • Cooking spray or olive oil for greasing muffin tin

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 12-cup muffin tin with cooking spray or olive oil.
  2. Whisk together the eggs and skim milk until blended smooth.
  3. Stir in the diced bell peppers, chopped spinach, onions, crumbled turkey sausage, shredded low-fat cheese, salt, and pepper until everything is evenly mixed.
  4. Pour the egg mixture into the prepared muffin cups, filling each cup about three-quarters full.
  5. Bake in the preheated oven for 18–20 minutes, or until the muffins are set and slightly golden on top.
  6. Allow the muffins to cool for a few minutes before carefully lifting them out of the tin. Enjoy warm or store for later.
