  • 8 egg whites
  • 1/2 cup cottage cheese
  • 1/2 cup chopped vegetables (bell peppers, spinach, etc.)
  • 1/4 cup shredded cheese (optional)
  • Salt and pepper to taste
  • Cooking spray or oil for greasing

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Whisk together the egg whites and cottage cheese until smooth.
  3. Stir in the chopped vegetables and the shredded cheese, if you’re using it.
  4. Season the mixture with salt and pepper according to your taste preference.
  5. Grease a muffin tin with cooking spray or oil.
  6. Pour the egg mixture evenly into the muffin cups, filling them about three-quarters full.
  7. Bake for 20-25 minutes or until the bites are set and lightly golden on top.
  8. Allow them to cool slightly before removing them from the tin. Enjoy warm or refrigerate for later!
