Nutritious and delicious muffin-sized egg white bites packed with protein and flavor, perfect for busy mornings or as a snack.

Ingredients

  • 2 cups liquid egg whites (or whites from about 10 large eggs)
  • 1/4 cup low-fat cottage cheese
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup chopped spinach
  • 1/2 cup diced bell pepper
  • 1/4 cup chopped red onion
  • 1/4 cup shredded reduced-fat cheddar cheese
  • Nonstick spray or olive oil for greasing

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 12-cup muffin tin with nonstick spray or olive oil.
  2. Blend together the egg whites, cottage cheese, garlic powder, salt, and black pepper until smooth and slightly frothy.
  3. Add the chopped spinach, diced bell pepper, red onion, and shredded cheddar cheese to the mixture, stirring until combined.
  4. Pour the mixture evenly into the muffin cups, filling each about 3/4 full.
  5. Bake for 18 to 22 minutes, or until the centers are set and the tops are a light golden brown.
  6. Cool for about 5 minutes before gently removing from the pan. Enjoy warm, or store in the fridge for meal prep.
