Delicious high-protein waffles made with Greek yogurt, perfect for a nutritious breakfast.

Ingredients

  • 1 1/2 cups whole wheat flour
  • 1 scoop vanilla protein powder (30g)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup plain Greek yogurt (2% or whole milk)
  • 2 large eggs
  • 1/4 cup milk (any kind)
  • 2 tbsp honey or maple syrup
  • 1 tsp vanilla extract
  • 2 tbsp melted coconut oil

Instructions

  1. Preheat your waffle iron to medium-high heat.
  2. Whisk together the whole wheat flour, protein powder, baking powder, baking soda, and salt until everything is mixed well.
  3. Combine the plain Greek yogurt, eggs, milk, honey (or maple syrup), and vanilla extract in a separate bowl. Whisk until you achieve a smooth texture.
  4. Pour the wet ingredients into the dry ingredients. Stir gently until just combined; don’t worry about a few lumps!
  5. Carefully fold in the melted coconut oil until blended.
  6. Lightly grease your waffle iron. Use about 1/3 cup of batter per waffle.
  7. Cook for approximately 3-4 minutes, or until the waffles are golden brown and crisp.
  8. Serve immediately, topped with fresh berries and a drizzle of maple syrup for an extra indulgent touch.

Notes

Make sure to not overmix the batter and feel free to experiment with different flavors or toppings.
