A savory blend of roasted sweet potatoes, spicy-sweet ground beef, and creamy cottage cheese, finished with hot honey.

  • 1 lb ground beef
  • 1/4 cup hot honey
  • 2 large sweet potatoes, cubed
  • 1 cup cottage cheese
  • 1 avocado, sliced
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cube the sweet potatoes and toss them in olive oil with salt and pepper. Spread them onto a baking sheet and roast for 20-25 minutes or until tender.
  3. Brown the ground beef in a skillet over medium heat. Stir in hot honey to taste and let it simmer for a few minutes.
  4. Assemble your bowls: Start with a base of roasted sweet potatoes, add hot honey ground beef, a dollop of cottage cheese, and sliced avocado.
  5. Drizzle additional hot honey over the bowls just before serving.

Notes

For a lighter option, substitute ground turkey. For different flavors, use Greek yogurt instead of cottage cheese.
