High Protein McGriddle Bites

Delicious and nutritious bite-sized muffins packed with protein, perfect for busy mornings or meal prep.

Ingredients

  • 2 cups high-protein pancake mix (Kodiak or similar)
  • 1 cup fully cooked breakfast sausage crumbles (turkey or pork)
  • 1/2 cup egg whites
  • 1/2 cup plain non-fat Greek yogurt
  • 1/4 cup pure maple syrup
  • 1/2 cup unsweetened almond milk (or milk of choice)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon sugar-free maple extract (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Spray your mini-muffin tin with non-stick cooking spray to prevent sticking.
  2. Cook the uncooked sausage in a skillet over medium heat and drain any excess fat.
  3. Whisk together the high-protein pancake mix and cinnamon in a large bowl.
  4. Combine egg whites, Greek yogurt, maple syrup, almond milk, vanilla extract, and if desired, sugar-free maple extract in another bowl until smooth.
  5. Pour the wet mixture into the dry ingredients bowl and stir until just combined. Fold in the cooked sausage crumbles.
  6. Fill each muffin cup about 3/4 full with the batter.
  7. Bake for about 12 to 15 minutes, or until they turn golden brown and a toothpick inserted comes out clean.
  8. Cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

Notes

Serve warm with additional maple syrup or fresh fruits. Store leftovers in an airtight container for up to a week or freeze for up to a month.
