Savory yet sweet breakfast bites that are high in protein, versatile, and utterly delicious.

Ingredients

  • 1 cup oatmeal
  • 1/2 cup cottage cheese
  • 2 eggs
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup cooked sausage or bacon (optional)
  • 1/4 cup shredded cheese (optional)
  • Maple syrup for serving

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a muffin tin.
  2. Combine the oatmeal, cottage cheese, eggs, baking powder, and salt in a bowl until well mixed.
  3. Fold in the cooked sausage or bacon and the shredded cheese, if desired.
  4. Pour the mixture into the muffin tin cups, filling them about 3/4 full.
  5. Bake for 15-20 minutes or until the bites are set and golden.
  6. Let them cool slightly before removing from the tin.
  7. Serve with a drizzle of maple syrup.

Notes
