Delicious and nutritious High Protein Pancake Muffins, perfect for busy mornings or family brunch.

Ingredients

  • 1 cup oat flour
  • 1 scoop protein powder
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 cup milk (or almond milk)
  • 1 tablespoon maple syrup (optional)
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Combine the oat flour, protein powder, baking powder, and salt in a large bowl, mixing until well combined.
  3. Whisk together the milk, maple syrup (if using), egg, and vanilla extract in another bowl until smooth.
  4. Pour the wet ingredients into the dry mix and gently stir until just combined. Be careful not to overmix; a few lumps are okay!
  5. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  6. Bake in the preheated oven for 15-20 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow the muffins to cool for a few minutes before digging in!

Notes

For added flavor, try adding cinnamon or your favorite spices to the dry mix, and consider mixing in shredded zucchini or carrots for extra nutrition.
