  • 1/4 cup shredded cheese (cheddar or your choice)
  • Salt and pepper to taste
  • 1 tablespoon butter or oil for cooking

Instructions

  1. Whisk together the eggs, Greek yogurt, salt, and pepper until well combined.
  2. Heat butter or oil in a non-stick skillet over medium heat.
  3. Pour in the egg mixture and allow it to sit for a few seconds.
  4. Using a spatula, gently stir the eggs, pushing them from the edges to the center, until they start to set.
  5. Before they are fully cooked, sprinkle in the cheese and continue to cook until the eggs are fluffy and cooked through but still creamy.
  6. Serve hot, topped with optional toppings if desired.
