A delightful and vibrant Mediterranean-inspired breakfast bowl, perfect for a quick meal on busy weekdays or a leisurely weekend treat.

Ingredients

  • 1.5 tsp olive oil
  • 2 large eggs
  • 4 tbsp feta cheese, crumbled
  • 1 handful kalamata olives, pitted
  • 1/2 bell pepper, diced
  • 1/2 scallion, thinly sliced
  • 1 tbsp fresh basil, chopped
  • Black pepper to taste

Instructions

  1. Heat 1.5 teaspoons of olive oil in a skillet over medium heat until it shimmers.
  2. Add the diced bell pepper and sauté for about 2-3 minutes until it softens.
  3. Crack the eggs directly into the skillet and gently stir them to scramble together with the peppers.
  4. Season with black pepper to taste, and continue cooking until the eggs are just set but still creamy.
  5. Stir in the crumbled feta cheese, kalamata olives, sliced scallions, and fresh basil.
  6. Remove the skillet from heat and serve warm in bowls.

Notes

Feel free to swap feta with ricotta or add some spinach for an extra nutritional punch. Ensure to reheat leftovers gently to avoid rubbery eggs.
