A delightful combination of sweet honey BBQ chicken thighs paired with creamy garlic Parmesan potatoes, perfect for family dinners or quick weeknight meals.

  • 4 chicken thighs
  • 1/2 cup honey
  • 1/2 cup BBQ sauce
  • 4 medium potatoes, peeled and diced
  • 1/4 cup butter
  • 1/2 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine the honey and BBQ sauce until well blended.
  3. Coat each chicken thigh with the honey BBQ mixture, then place them in a baking dish.
  4. Bake the chicken in the preheated oven for 30-35 minutes or until cooked through and juices run clear.
  5. While the chicken is baking, bring a pot of salted water to a boil. Add the diced potatoes and cook for about 15 minutes, or until they’re tender.
  6. Once the potatoes are tender, drain them and return them to the pot. Add the butter, minced garlic, salt, and pepper, then mash until creamy.
  7. Mix the grated Parmesan cheese into the mashed potatoes until combined and creamy.
  8. Serve the honey BBQ chicken alongside the garlic Parmesan potatoes, garnished with fresh parsley.

Notes

For deeper flavor, let the chicken marinate in the honey BBQ mixture for a few hours before baking. You can also add roasted veggies or adjust seasoning to taste.
