  • 4 chicken breasts
  • 1 cup honey BBQ sauce
  • 4 large potatoes
  • 1 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your grill to medium-high heat.
  2. Generously season the chicken breasts on both sides with salt and pepper.
  3. Brush the honey BBQ sauce over the chicken, ensuring it’s well-coated.
  4. Grill the chicken for about 6-7 minutes on each side, until fully cooked and reaching an internal temperature of 165°F (75°C).
  5. While the chicken grills, wash and peel the potatoes, then cut them into even cubes.
  6. In a large bowl, toss the cubed potatoes with olive oil, minced garlic, salt, and pepper to your taste.
  7. Transfer the seasoned potatoes to a baking dish and sprinkle with grated Parmesan cheese.
  8. Bake in the oven at 400°F (200°C) for 25-30 minutes, until the potatoes are golden brown and crispy on the outside.
  9. Serve the grilled chicken alongside the cheesy garlic Parmesan potatoes, garnishing with fresh parsley if desired.

Notes

Feel free to swap the potatoes for sweet potatoes or substitute chicken with tofu for a vegetarian option. For a spicy kick, consider adding smoked paprika or cayenne to the chicken.
