A comforting dish of honey BBQ chicken served with roasted garlic potatoes, ideal for cozy family dinners.

  • 46 chicken thighs or breasts (skin-on for extra crispiness)
  • Salt and pepper, to taste
  • 1 teaspoon smoked paprika
  • 2 tablespoons olive oil (for searing)
  • ⅓ cup honey
  • ½ cup BBQ sauce (store-bought or homemade)
  • 1.5 pounds baby potatoes or Yukon Gold potatoes, washed and halved
  • 34 garlic cloves, minced
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 teaspoon smoked paprika
  • Fresh parsley, chopped

Instructions

  1. Preheat your oven to 400°F (200°C). Meanwhile, wash and halve the baby potatoes.
  2. In a mixing bowl, combine them with 2 tablespoons of olive oil, minced garlic, salt, pepper, and 1 teaspoon of smoked paprika. Toss to coat evenly, then spread the potatoes out on a baking sheet.
  3. Pat the chicken thighs or breasts dry with a paper towel. Season both sides generously with salt, pepper, and smoked paprika.
  4. Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Once hot, place the chicken skin-side down and sear for about 6-8 minutes or until golden brown.
  5. While the chicken cooks, whisk together the honey and BBQ sauce in a small bowl until well combined.
  6. Transfer the seared chicken to the baking sheet alongside the potatoes. Brush a generous amount of the honey BBQ glaze over each piece of chicken.
  7. Roast everything in the preheated oven for 25-30 minutes. Ensure the chicken reaches an internal temperature of 165°F (74°C), and the potatoes should be tender and golden.
  8. Once cooked, sprinkle fresh parsley over the dish before serving and enjoy!

Notes

For an extra hit of flavor, brush more glaze on the chicken during the last 5 minutes of roasting. This dish can also be customized with various vegetables.
