A vibrant and flavorful dish featuring tender chicken glazed in honey-lime marinade paired with refreshing mango salsa, perfect for summer evenings.

Ingredients

  • 2 large chicken breasts
  • 1/4 cup honey
  • 1/4 cup fresh lime juice
  • 1 teaspoon lime zest
  • Salt and pepper to taste
  • 1 ripe mango, diced
  • 1/4 red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • 1 tablespoon olive oil

Instructions

  1. Whisk together honey, lime juice, lime zest, and a pinch of salt and pepper to create the marinade.
  2. Place the chicken breasts in the marinade, making sure they are well coated. Allow to marinate for at least 30 minutes.
  3. Preheat your grill or oven to medium-high heat.
  4. Grill or bake the chicken for about 6–7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
  5. Prepare the mango salsa by mixing diced mango, chopped red onion, minced jalapeño, cilantro, and olive oil in a bowl. Season with salt to taste.
  6. Plate the chicken and top generously with the fresh mango salsa.

Notes

For a milder taste, substitute jalapeño with bell pepper. Store leftovers separately for best freshness.
