A delightful mix of sweetness and spice, these Hot Honey Chicken Bowls are perfect for a quick dinner any night of the week.

Ingredients

  • 1 ½ lbs boneless skinless chicken breasts or thighs, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon onion powder
  • Salt and pepper, to taste
  • ⅓ cup honey
  • 12 tablespoons hot sauce
  • 1 tablespoon apple cider vinegar
  • ½ teaspoon crushed red pepper flakes (optional)
  • 2 cups cooked rice (white, brown, jasmine, or cauliflower rice)
  • 1 cup roasted broccoli
  • 1 cup roasted sweet potatoes or carrots
  • ½ avocado, sliced
  • ¼ cup pickled red onions (optional)
  • Greek yogurt or sour cream, for drizzling
  • Fresh cilantro or green onions, for garnish

Instructions

  1. In a large skillet over medium-high heat, add the olive oil.
  2. Add the bite-sized chicken pieces to the skillet. Season with garlic powder, smoked paprika, onion powder, salt, and pepper. Sauté until golden brown and fully cooked, about 6-8 minutes. Remove from heat and set aside.
  3. In a small saucepan, combine honey, hot sauce, apple cider vinegar, and crushed red pepper flakes. Warm over low heat until slightly thinned. Pour half of this mixture over the cooked chicken and toss to coat, saving the rest for later.
  4. In each bowl, layer the cooked rice, roasted vegetables, and hot honey chicken. Top with sliced avocado, pickled onions, and a drizzle of yogurt or sour cream. Finish with the reserved hot honey sauce, and sprinkle fresh herbs over the top.
  5. Serve and enjoy!
