A rich and creamy chicken pasta dish that’s perfect for any occasion and comes together in under 30 minutes.

Ingredients

  • 1 lb boneless skinless chicken breasts, cut into bite-size pieces
  • 1 tsp kosher salt (to taste)
  • 2 tbsp extra-virgin olive oil (for sautéing)
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup low-sodium chicken bouillon or stock
  • 1/2 cup freshly grated parmesan cheese
  • 1/2 cup sun-dried tomatoes
  • 1 tbsp Italian seasoning
  • 1/4 tsp black pepper (to taste)
  • 1/4 tsp red pepper flakes (optional)
  • 8 oz penne pasta
  • 1/4 cup fresh basil leaves (or parsley)

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Season the chicken pieces with kosher salt and add to the skillet; cook for 6-8 minutes until golden brown and cooked through.
  3. Stir in the minced garlic and sauté for 1-2 minutes until fragrant.
  4. Pour in the chicken bouillon or stock and let it simmer.
  5. Add the heavy cream and stir until it becomes creamy.
  6. Mix in the sun-dried tomatoes and Italian seasoning; let it simmer for 5-7 minutes until thickened.
  7. Boil the penne pasta according to package instructions until al dente.
  8. Stir in the parmesan cheese until melted into the sauce.
  9. Fold the cooked pasta into the creamy sauce.
  10. Top with fresh basil leaves before serving.

Notes

Serve with a drizzle of olive oil, extra parmesan, and a side salad dressed in balsamic vinaigrette.
