A quick and easy weeknight meal packed with flavor and a spicy kick, featuring crispy chicken in a sweet and fiery sauce.

  • 1 lb Boneless, Skinless Chicken Breasts or Thighs
  • 1/4 cup Cornstarch
  • 1 piece Egg White
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • Vegetable Oil
  • 1 tablespoon Sesame Oil
  • 2 tablespoons Garlic, minced
  • 1 tablespoon Ginger, minced
  • 23 Dried Red Chilies or Crushed Red Pepper Flakes
  • 1/2 cup Tomato Ketchup
  • 2 tablespoons Soy Sauce
  • 1 tablespoon Chili Garlic Sauce
  • 1 tablespoon Vinegar
  • 1 tablespoon Sugar or Honey
  • 1/4 cup Water
  • Sliced Green Onions
  • Toasted Sesame Seeds
  • Thin Strips of Fried Onion or Bell Pepper

Instructions

  1. Prepare the Chicken: In a mixing bowl, combine cornstarch, egg white, salt, and black pepper. Coat the chicken pieces thoroughly and let marinate for about 15 minutes.
  2. Make the Sauce: In another bowl, mix together the tomato ketchup, soy sauce, chili garlic sauce, vinegar, sugar or honey, and water. Set aside.
  3. Fry the Chicken: Heat vegetable oil in a large pan over medium-high heat. Fry the marinated chicken pieces until golden and crispy, about 5-7 minutes. Remove and place on paper towels to drain.
  4. Stir-Fry Aromatics: In the same pan, add sesame oil. Sauté the minced garlic and ginger until fragrant, then toss in the dried red chilies.
  5. Combine: Return the fried chicken to the pan and add the sauce mixture. Stir-fry for 2-3 minutes until well-coated and heated through.
  6. Serve: Plate your dragon chicken, garnishing with sliced green onions, toasted sesame seeds, and crispy onion or bell pepper strips.

Notes

To achieve perfect crispiness, ensure oil is hot enough before adding chicken. Marinating adds flavor and crunchy texture.
