A flavorful Caribbean dish featuring marinated chicken with a spicy kick, perfect for grilling.

Ingredients

  • 4 chicken thighs
  • 4 chicken drumsticks
  • 1 tablespoon allspice
  • 1 teaspoon thyme
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1/4 cup soy sauce
  • 1/4 cup vegetable oil
  • 2 tablespoons brown sugar
  • 1 lime, juiced
  • 1 Scotch bonnet pepper, finely chopped
  • Salt and pepper to taste

Instructions

  1. Combine the allspice, thyme, cinnamon, nutmeg, minced garlic, grated ginger, soy sauce, vegetable oil, brown sugar, lime juice, finely chopped Scotch bonnet pepper, and salt and pepper in a mixing bowl to create the marinade.
  2. Rinse the chicken under cold water and pat it dry with paper towels.
  3. Coat the chicken pieces evenly with the marinade, ensuring each piece is well covered. For maximum flavor, refrigerate the marinated chicken for at least 120 minutes, or ideally, overnight.
  4. Preheat your grill to medium-high heat.
  5. Grill the marinated chicken for about 25-30 minutes, turning occasionally, until the internal temperature reaches 165°F.
  6. Let the chicken rest for a few minutes before serving. Enjoy!

Notes

For a milder option, substitute Scotch bonnet pepper with a less spicy chili. Pair with traditional sides like rice and peas or mango salsa.
