Deliciously satisfying Keto Egg Bites that can be customized for any meal, perfect for breakfast or snacks.

Ingredients

  • 8 large eggs
  • ¼ cup milk
  • ½1 tsp salt
  • ½ tsp black pepper
  • ¼ cup white onion (finely diced)
  • ⅔ cup baby spinach (roughly chopped)
  • 4 strips bacon (cooked and crumbled)
  • ¼ cup shredded cheddar cheese
  • 2 links cooked chicken sausage (chopped into tiny pieces)
  • ½ cups white or baby bella mushrooms (diced)
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ cup bell pepper (deseeded and chopped)
  • ¼ cup buffalo sauce
  • ¼ cup chopped green onions
  • 1 cup cooked or rotisserie chicken (chopped into small pieces)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin with avocado oil or cooking spray.
  2. Whisk together eggs, milk, salt, and pepper in a large bowl until well blended.
  3. Add your preferred flavor variations by mixing in your selected ingredients.
  4. Divide the egg mixture evenly among the greased muffin cups, sprinkling extra cheese on top if desired.
  5. Bake for 14 to 18 minutes until puffed and set in the middle.
  6. Allow to cool slightly before serving. Store leftovers in an airtight container in the fridge.
