  • 1/2 teaspoon salt
  • 1/4 teaspoon cayenne pepper (optional)
  • 2 tablespoons olive oil, divided
  • 4 garlic cloves, minced
  • 1 teaspoon Italian seasoning or oregano
  • 1/2 teaspoon crushed red pepper flakes
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1.5 teaspoon tomato extract
  • 1 ounce sun-dried tomatoes, finely sliced
  • 4 tablespoons Parmesan cheese
  • 1/4 cup fresh basil leaves, chopped

Instructions

  1. Begin by patting the chicken dry, then season both sides generously with salt and cayenne pepper (if using).
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  3. Cook the seasoned chicken for about 3 to 4 minutes per side until it’s golden brown and cooked through. Remove it from the skillet and set aside.
  4. In the same skillet, pour in the remaining tablespoon of olive oil. Add the minced garlic, Italian seasoning, and crushed red pepper flakes. Sauté for about 30 seconds, or until fragrant.
  5. Carefully pour in the chicken broth, scraping up any flavorful browned bits from the pan to enhance the sauce.
  6. Stir in the heavy cream, tomato extract, and sun-dried tomatoes, allowing the mixture to gently simmer.
  7. Mix in the Parmesan cheese until it’s fully melted and the sauce is creamy.
  8. Return the chicken to the skillet, sprinkle the fresh basil on top, and let it cook for an additional 1 to 2 minutes until warmed through. Serve it hot and enjoy!
