A delightful recipe that marries the vibrant flavors of Korea with the simplicity of a weeknight meal, featuring a sweet and savory marinade that satisfies the palate.

  • 1 pound boneless, skinless chicken breasts
  • 1/4 cup low sodium soy sauce
  • 1/4 cup unsweetened apple sauce
  • 1/4 cup finely chopped yellow onion
  • 1 tsp sesame oil
  • 1 tsp grated ginger
  • 1 tbsp light brown sugar
  • 2 garlic cloves (crushed)
  • Optional: red pepper flakes for heat

Instructions

  1. Pound the chicken breasts in a Ziploc bag to about ½ inch thick for even cooking.
  2. In a medium bowl, mix the soy sauce, apple sauce, chopped onion, sesame oil, grated ginger, brown sugar, crushed garlic, and red pepper flakes.
  3. Reserve ¼ cup of the marinade. Pour the remaining marinade into the bag with the chicken, seal, and massage to coat. Refrigerate for at least one hour.
  4. Preheat the grill to medium-high heat.
  5. Grill chicken breasts for 2-3 minutes on each side or until the internal temperature reaches 165°F (75°C).
  6. Serve grilled chicken sliced over jasmine rice with sesame seeds and sides of steamed broccoli or snap peas.

Notes

Pound chicken evenly for best results and marinate for more than an hour for intense flavor. Consider using chicken thighs for a juicier option.
