A healthy and delicious cookie blending lemon zest and chia seeds, perfect for breakfast or a snack.

Ingredients

  • 1 cup almond flour
  • 1/4 cup chia seeds
  • 1/4 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1 lemon, zested and juiced
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the almond flour, chia seeds, baking soda, and salt in a mixing bowl, stirring well.
  3. Whisk together the honey (or maple syrup), melted coconut oil, lemon juice, lemon zest, and vanilla extract until smooth.
  4. Pour the wet mixture into the dry ingredients and stir until a cohesive dough forms.
  5. Scoop out portions of dough onto a lined baking sheet, flattening each scoop slightly.
  6. Bake for 10-12 minutes, or until the edges turn golden brown.
  7. Let the cookies cool on the baking sheet for a few minutes before transferring to a cooling rack.

Notes

For a vegan option, substitute honey with maple syrup. For a nut-free version, use sunflower seed flour instead of almond flour.
