Ingredients
Scale
1 1/2 lb chicken breast (2 large, patted dry with paper towels)
1 Tbsp olive oil (to sauté)
1 Tbsp parsley (to garnish, optional)
1/2 lemon (sliced for garnish, optional)
2 large eggs
1 garlic clove (minced)
1/2 tsp Italian seasoning
1/2 tsp salt
1/4 tsp ground black pepper
1 cup Parmesan cheese (grated)
3 Tbsp all-purpose flour
8 Tbsp unsalted butter
2 garlic cloves (minced)
1/4 cup lemon juice
1/4 cup chicken broth
1/4 tsp ground black pepper
Instructions
Prep Chicken: Cut the chicken breasts in half lengthwise and pound them to an even thickness for uniform cooking.
Make Egg Mixture: In a bowl, whisk the eggs, minced garlic, Italian seasoning, salt, and black pepper until fully combined.
Create Parmesan Mixture: In another bowl, mix the grated Parmesan with the flour to create a dredging mix.
Dredge Chicken: Dip each chicken piece into the egg mixture, then coat it evenly with the Parmesan mix.
Cook Chicken: Heat olive oil in a skillet over medium heat. Cook the chicken for 4-5 minutes per side or until golden brown and fully cooked.
Prepare Sauce: In a separate saucepan, melt the unsalted butter over medium heat. Add in minced garlic and sauté until fragrant. Pour in chicken broth, lemon juice, and black pepper; simmer for about 2 minutes.
Combine and Serve: Place the chicken on a platter and generously pour the lemon butter sauce on top. Garnish with lemon slices and parsley, if desired.
