A quick and flavorful Lemon Chicken recipe featuring tender chicken breasts in a zesty lemon-garlic sauce, perfect for weeknight dinners.

  • 4 boneless, skinless chicken breasts
  • 1 cup Parmesan cheese, grated
  • 1/2 cup flour
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/4 cup lemon juice
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Mix the flour, salt, and pepper in a shallow dish. In another dish, add the grated Parmesan cheese.
  3. Dredge each chicken breast in the flour mixture, ensuring it’s fully coated. Then dip it into the Parmesan cheese, pressing gently for an even layer.
  4. Heat 2 tablespoons of butter in a large skillet over medium-high heat. Once hot, add the chicken breasts and cook for about 5 minutes on each side until golden brown.
  5. Transfer the chicken to a baking dish.
  6. Melt the remaining butter in the same skillet and sauté the minced garlic for about 1 minute until fragrant.
  7. Pour in the chicken broth and lemon juice, scraping any brown bits from the bottom of the skillet. Bring to a gentle simmer.
  8. Pour the sauce over the chicken in the baking dish.
  9. Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the juices run clear.
  10. Garnish with fresh parsley before serving.

Notes

You can substitute chicken broth with vegetable broth and use gluten-free flour if desired.
