A refreshing and healthy Lemon Cream Chia Pudding that’s easy to make and perfect for breakfast, snacks, or dessert.

Ingredients

  • 1/4 cup chia seeds
  • 1 cup almond milk (or any milk of choice)
  • 1/4 cup lemon juice
  • 2 tablespoons maple syrup (or honey)
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon
  • Fresh berries for topping (optional)

Instructions

  1. In a bowl, start by combining the chia seeds, almond milk, lemon juice, maple syrup, and vanilla extract.
  2. Stir the mixture well, making sure all ingredients blend together smoothly without clumps.
  3. Add the lemon zest, and mix again until it’s evenly distributed.
  4. Cover the bowl and refrigerate for at least 240 minutes or overnight, until it thickens to a creamy pudding-like consistency.
  5. Serve the chilled pudding in bowls, topped with fresh berries if desired.

Notes

Properly store in an airtight container in the refrigerator for up to 5 days. Can be gently warmed if preferred.
