A hearty breakfast sandwich featuring crispy bacon, fluffy scrambled eggs, and creamy avocado, nestled between toasty bagel halves.

Ingredients

  • 4 bagels, halved
  • 6 large eggs
  • 6 slices bacon
  • 4 slices cheddar cheese
  • 1 avocado, sliced
  • 1 tomato, sliced
  • 2 tbsp butter
  • 2 tbsp milk or cream
  • Salt, to taste
  • Black pepper, to taste
  • 1 tbsp chives, chopped

Instructions

  1. Cook the bacon in a skillet over medium heat until crispy, about 6–8 minutes. Transfer to a paper towel-lined plate to drain.
  2. Toast the bagel halves in the same skillet until golden brown.
  3. Whisk the eggs, milk, salt, and black pepper together in a bowl until well combined.
  4. Pour the whisked eggs into the buttered skillet over medium-low heat. Stir gently until soft and fluffy.
  5. Place slices of cheddar cheese over the cooked eggs, allowing them to melt.
  6. Layer the bottom halves of the toasted bagels with eggs, crispy bacon, sliced avocado, and fresh tomato.
  7. Sprinkle chopped chives on top and cover with the bagel tops.
  8. Serve warm and enjoy your wonderful creation!

Notes

For a healthier twist, swap the bacon for sautéed mushrooms or spinach.
