Delicious and nutritious Loaded Egg Bites packed with flavor, perfect for breakfast or meal prep.

Ingredients

  • 6 large eggs
  • 1/2 cup cooked bacon, chopped
  • 1/2 cup cooked sausage, crumbled
  • 1 cup diced potatoes (cooked)
  • 1 cup fresh spinach, chopped
  • 1 cup shredded cheese (cheddar or your choice)
  • Salt and pepper to taste
  • Cooking spray or olive oil for greasing muffin tin

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Lightly grease a muffin tin with cooking spray or olive oil.
  3. Whisk together the eggs in a large bowl until well beaten.
  4. Season the eggs with salt and pepper to taste.
  5. Add the chopped bacon, crumbled sausage, cooked potatoes, chopped spinach, and shredded cheese to the bowl.
  6. Stir the mixture until all ingredients are evenly combined.
  7. Pour the egg mixture into the muffin tin, filling each cup about 3/4 full.
  8. Bake for 20-25 minutes, or until the egg bites are set and lightly golden on top.
  9. Allow to cool for a few minutes before gently removing from the muffin tin.
  10. Enjoy fresh or store in the refrigerator for meal prep.
