  • 2 slices Whole grain bread, cubed
  • 1 cup Spinach, chopped
  • 1 cup Cheese (your choice!)
  • 1 Bell pepper, diced
  • 1 Onion, diced
  • 1/2 cup Milk
  • 1/2 tsp Salt
  • 1/4 tsp Pepper
  • Optional: herbs and spices for added flavor

Instructions

  1. Prep the Veggies: Dice the bell peppers and onions. Heat a pan over medium heat and sauté the veggies until they become tender.
  2. Whisk the Eggs: In a medium bowl, whisk together the eggs, milk, salt, and pepper until they are fully combined. Next, fold in the sautéed vegetables and spinach to ensure they meld together beautifully.
  3. Fill the Muffin Tin: Grease your muffin tin. Pour the egg mixture into each cup until they are about 2/3 full. Top each muffin with your choice of cheese for that perfect finishing touch!
  4. Bake: Preheat your oven to 350°F (175°C). Bake the muffins for 20-25 minutes, or until the eggs are set and a toothpick comes out clean.
  5. Cool and Store: Once baked, let the muffins cool before transferring them to airtight containers. Store in the refrigerator for up to a week, or freeze for longer-lasting breakfasts.
