Delicious maple bacon pancake muffins that combine fluffy pancake batter with crispy bacon and rich maple syrup.

Ingredients

  • 1 cup pancake mix
  • 1/2 cup milk
  • 1 egg
  • 1/4 cup maple syrup
  • 1/2 cup cooked and crumbled bacon
  • 1/4 cup chopped pecans (optional)
  • 1/2 teaspoon vanilla extract
  • Cooking spray

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin with cooking spray.
  2. Combine pancake mix, milk, egg, maple syrup, and vanilla extract in a large mixing bowl. Stir until just combined.
  3. Fold in the cooked and crumbled bacon and add the optional chopped pecans.
  4. Spoon the batter evenly into the muffin cups, filling each about two-thirds full.
  5. Place the tin in the preheated oven and bake for 15-20 minutes, or until a toothpick comes out clean.
  6. Allow the muffins to cool slightly before removing them from the pan. Enjoy warm!

Notes

Serve with extra maple syrup or whipped cream. Pairs well with fresh fruit.
