Ingredients

Scale
  • 1/2 cup olive oil
  • 1/4 cup vinegar (balsamic, apple cider, or red wine)
  • 23 cloves of garlic, minced
  • 1 tablespoon mustard
  • 12 teaspoons salt
  • 1 teaspoon pepper
  • 1 tablespoon fresh herbs (oregano, cilantro, or rosemary), chopped
  • Optional: juice of 1 lemon or lime

Instructions

  1. Whisk together the olive oil, vinegar, minced garlic, mustard, salt, pepper, and fresh herbs until well combined.
  2. Add the juice of one lemon or lime for a zesty twist and mix again.
  3. Place your chicken breasts or thighs into a resealable bag or shallow dish. Pour the marinade over the chicken, ensuring it’s well coated.
  4. Seal the bag or cover the dish and refrigerate. Let it sit for at least 30 minutes, but for the best flavor, marinate for up to 24 hours.
  5. Grill or bake the chicken as desired for a mouthwatering meal. Enjoy!

Notes

Let the chicken marinate longer for better flavor. Use a meat thermometer to ensure it’s cooked to 165°F.
