A creamy and savory chicken dish that is perfect for romantic dinners or weeknight meals, featuring sun-dried tomatoes and parmesan in a luscious sauce.

  • 2 lbs boneless skinless chicken breasts
  • 1 ⅓ tablespoons olive oil
  • Salt and black pepper (to taste)
  • 1 cup chicken broth
  • 2/3 cup heavy cream (at room temperature)
  • 1/4 cup fresh grated parmesan cheese (at room temperature)
  • 2 teaspoons minced garlic
  • 2/3 cup sun-dried tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon crushed red pepper flakes

Instructions

  1. Preheat your oven to 375°F (190°C). Generously season the chicken breasts with salt and black pepper.
  2. In a skillet, heat olive oil over medium-high heat. Sear each chicken breast for about 3-4 minutes per side until golden brown. Remove them from the skillet and set aside.
  3. Add minced garlic to the same skillet and sauté for about one minute, until it’s fragrant.
  4. Pour in the chicken broth and let it cool slightly. Stir in the heavy cream, parmesan cheese, sun-dried tomatoes, oregano, and crushed red pepper flakes. Allow the sauce to simmer gently.
  5. Return the seared chicken to the skillet, ensuring it’s coated well with the sauce.
  6. Transfer the skillet to your preheated oven. Bake for 12-15 minutes, until the chicken reaches an internal temperature of 160°F (71°C).
  7. Let the chicken rest for about 5 minutes before serving, allowing the flavors to meld beautifully.

Notes

Consider adding fresh basil or parsley for garnish. Pairs well with pasta, steamed vegetables, or a green salad.
