A creamy, flavor-packed chicken dish with sun-dried tomatoes and Parmesan that will impress any guest.

  • 1 tablespoon olive oil
  • 1 cup sun-dried tomatoes
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Begin by heating the olive oil in a skillet over medium heat. Season the chicken breasts with salt and pepper on both sides.
  2. Sear the chicken for about 2-3 minutes on each side until they achieve a beautiful golden brown color.
  3. Once seared, transfer the chicken to your slow cooker.
  4. In the same skillet, add the minced garlic and sun-dried tomatoes, cooking for about 1-2 minutes until they become fragrant.
  5. Next, stir in the heavy cream, grated Parmesan cheese, and Italian seasoning, mixing everything well.
  6. Pour this creamy sauce over the chicken in the slow cooker, ensuring it’s all covered.
  7. Cover and cook on low for 360 minutes or high for 180 minutes until the chicken is beautifully tender and thoroughly cooked.
  8. Before serving, garnish your dish with fresh basil for a burst of color and flavor.

Notes

For sun-dried tomatoes in oil, you can use dry ones by rehydrating them in hot water for 15–20 minutes.
