A creamy and rich dish of chicken breasts infused with sun-dried tomatoes and herbs that turns any weeknight into a special occasion.

  • 4 thinly sliced chicken breasts
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 3 tablespoons all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/3 cup sun-dried tomatoes, chopped
  • 1 small onion, diced
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken stock
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon crushed red pepper flakes
  • 1/2 cup parmesan cheese
  • Basil, sliced, for serving

Instructions

  1. Combine the flour, salt, and pepper in a shallow bowl.
  2. Dredge the chicken breasts in the seasoned flour, shaking off any excess.
  3. Heat the olive oil and butter in a large skillet over medium-high heat.
  4. Add the chicken to the skillet and cook for about 3 minutes on each side until golden brown. Remove the chicken and set it aside.
  5. Add the diced onion and chopped sun-dried tomatoes to the same skillet. Sauté for around 4 minutes until the onion softens.
  6. Cook the minced garlic for an additional minute.
  7. Pour in the chicken stock, scraping up any browned bits from the bottom of the pan.
  8. Stir in the heavy cream, Italian seasoning, and crushed red pepper flakes, and bring the mixture to a simmer for 2-3 minutes.
  9. Remove from heat and stir in the parmesan cheese. Adjust seasoning with additional salt and pepper to taste.
  10. Return the chicken to the skillet, ensuring it is well-coated in the sauce. Serve garnished with sliced basil.

Notes

Can substitute chicken with turkey or use vegetable broth for a vegetarian version. Best served with mashed potatoes or pasta.
