A comforting and creamy chicken dish that combines tender chicken thighs with a luscious sauce and sun-dried tomatoes, perfect for weeknight dinners.

  • 2 tablespoons olive oil
  • 1 cup heavy cream
  • ½ cup sun-dried tomatoes, chopped
  • ½ cup freshly grated parmesan cheese
  • 1 tablespoon minced garlic
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste
  • Optional: Fresh basil or red pepper flakes for garnish

Instructions

  1. Prepare the Chicken: Pat the chicken thighs dry and season generously with salt, black pepper, and Italian seasoning.
  2. Sear the Chicken: In a skillet, heat the olive oil over medium heat. Sear the chicken for 4-5 minutes on each side until golden brown. Set aside.
  3. Sauté Garlic: In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant.
  4. Make the Sauce: Lower the heat, then stir in the heavy cream, gradually adding the parmesan cheese while stirring until smooth and creamy.
  5. Add Sun-Dried Tomatoes: Mix in the chopped sun-dried tomatoes and allow the sauce to simmer for an additional 2-3 minutes.
  6. Simmer the Chicken: Nestle the seared chicken in the skillet, spoon the sauce over the top, cover, and let simmer on low for 10-12 minutes until chicken reaches an internal temperature of 165°F.
  7. Garnish and Serve: Remove from heat, garnish with fresh basil or red pepper flakes, and serve hot with your favorite sides.

Notes

Patting the chicken dry ensures a better sear. Don’t rush the sauce to deepen the flavors.
