  • 4 chicken breasts
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup spinach
  • 1 teaspoon garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Parmesan cheese, for garnish

Instructions

  1. Heat a large skillet over medium heat and add the chicken breasts. Season with salt, pepper, and Italian seasoning.
  2. Sear the chicken until golden brown and fully cooked, about 6-7 minutes on each side. Remove the chicken and set aside.
  3. Add the minced garlic to the same skillet. Sauté until fragrant, about one minute.
  4. Pour in the chicken broth and bring to a gentle simmer.
  5. Stir in the heavy cream and chopped sun-dried tomatoes. Cook for another 3-5 minutes until the sauce thickens slightly.
  6. Add the spinach and cook until it wilts down.
  7. Return the chicken to the skillet, allowing it to coat in the creamy sauce. Cook for an additional 2-3 minutes to warm through.
  8. Serve warm, garnished with a sprinkle of Parmesan cheese.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days. Reheat on medium heat or in the microwave.
