  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 teaspoon garlic, minced
  • 1 teaspoon Italian seasoning
  • Fresh basil for garnish

Instructions

  1. Start by generously seasoning each chicken breast with salt and pepper on both sides.
  2. Heat the olive oil in a large skillet over medium heat.
  3. Add the seasoned chicken breasts to the skillet. Sear for about 5-7 minutes on each side, until golden brown, then remove the chicken and set aside.
  4. In the same skillet, add the minced garlic and sun-dried tomatoes. Sauté for 1-2 minutes until fragrant.
  5. Pour in the chicken broth, bringing it to a simmer. Stir in the heavy cream and Italian seasoning.
  6. Return the seared chicken to the skillet. Cover and let it simmer for about 10-15 minutes until the chicken is fully cooked through.
  7. Garnish with fresh basil before serving.

Notes

Store leftovers in airtight containers for 3-4 days in the refrigerator, or freeze for up to 3 months. Reheat on the stove with a splash of chicken broth to restore creaminess.
