A delightful dish of tender chicken breasts in a velvety cream sauce with sun-dried tomatoes and fresh basil, perfect for special occasions or cozy dinners.

  • 3 tbsp extra-virgin olive oil
  • 4 pieces boneless, skinless chicken breasts
  • 1 tbsp Kosher salt
  • 1 tbsp freshly ground black pepper
  • 2 cloves garlic (finely chopped)
  • 1 tbsp fresh thyme leaves
  • 1 tsp crushed red pepper flakes
  • 0.75 cup low-sodium chicken broth
  • 0.5 cup sun-dried tomatoes (finely chopped)
  • 0.5 cup heavy cream
  • 0.25 cup Parmesan cheese (finely grated)
  • 1 cup fresh basil (torn, for serving)

Instructions

  1. Preheat your oven to 375°F and arrange a rack in the center.
  2. Heat 1 tablespoon of olive oil over medium-high heat in a large ovenproof skillet.
  3. Season the chicken breasts with salt and pepper. Cook until golden brown, about 5 minutes per side, then transfer to a plate.
  4. Lower the heat to medium and add the remaining olive oil to the skillet.
  5. Stir in the garlic, thyme, and red pepper flakes, cooking until fragrant (around 1 minute).
  6. Pour in the chicken broth, sun-dried tomatoes, heavy cream, and Parmesan. Season to taste and bring the mixture to a simmer.
  7. Return the chicken to the skillet along with any accumulated juices.
  8. Transfer the skillet to the oven and bake for 10 to 12 minutes, or until the chicken reaches an internal temperature of 165°F.
  9. Serve the chicken on a platter, spoon the sauce over it, and top generously with fresh basil.
