A creamy, savory dish with tender chicken, crispy bacon, and sun-dried tomatoes—perfect for an impressive weeknight dinner.

  • 4 chicken breasts
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup bacon, cooked and crumbled
  • 1 cup heavy cream
  • 1 cup parmesan cheese, grated
  • 12 oz pasta (penne or fettuccine)
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large skillet over medium heat, fry the bacon until crispy. Once done, remove it and let it drain on paper towels.
  3. In the same skillet, add the minced garlic and chopped sun-dried tomatoes. Sauté for about 2 minutes until fragrant.
  4. Season the chicken breasts with salt and pepper, then add them to the skillet. Sear the chicken for about 6-7 minutes on each side until golden and cooked through.
  5. Pour in the heavy cream and mix in the grated parmesan cheese until it melts into a smooth sauce.
  6. Toss the cooked chicken with the pasta and crumbled bacon, stirring to coat all the ingredients evenly with the sauce.
  7. Serve garnished with fresh basil leaves for a pop of color and flavor.

Notes

For a lighter option, substitute half of the heavy cream with low-fat milk or a dairy alternative.
